Frosted animal cookie truffles

Yes, you’re reading that title correctly.  Frosted animal cookie truffles!! And the frosted part is actually really important.  I could eat an entire bag of these pink and white beauties without blinking an eye.  There’s something very nostalgic to me about those pink and white sprinkled cookies, so when I saw someone make these on a Tastemade snap story I knew it was only a matter of time before I made them.

Is anyone else obsessed with the Tastemade snap story, btw?  I literally am drooling after watching every one of their videos.  There’s something soo deeply and strangely satisfying about watching a gorgeous dish get made in 30 seconds.  Anyway, I’ve screenshotted a million of their recipes and have actually never made any of them.  HOWEVER this recipe I didn’t even need to screenshot, I just knew it was going to happen. I rationalized this decision by telling myself that I’d send these truffles to some out-of-state friends and family, but let’s be real: I ate most of them. The lucky few coworkers who snatched one when I (finally) brought them into work were intrigued and confused at first, but quickly came around to the idea.

Also, these aren’t healthy.  Let’s not beat around the bush.  But they are WORTH it.  And so pretty!

What these truffles lack in nutritional value, they make up for in cheapness. Here’s what you’ll need:


Ingredients:

  • 12 oz bag of frosted animal cookies
  • 16 oz store-bought cream cheese frosting
  • 12 oz white chocolate chips
  • 1 tbsp coconut or vegetable oil
  • Rainbow or pink sprinkles

Directions:

  1. Place the animal crackers in a food processor and process until you have fine crumbs.  Alternatively, put in a large plastic bag and bash with a rolling pin (pretty fun actually). Don’t worry if some of the crumbs are a little bigger than others; they will combine with the frosting after setting.
  2. In a large bowl, mix your cookie crumbs and about 3/4 of the tub of frosting.  Mix and add more frosting as needed.  You’re looking for a sort of “dough” to form, meaning it’s not too crumbly and not too wet.
  3. Let sit in the fridge for at least 30 minutes.  This will allow the dough to firm up and make it easier to roll into balls.
  4. While you wait, melt the chocolate chips with the oil.  Just stick it into the microwave for 20 second intervals and mix until melted and smooth.
  5. Grab about 1 Tbsp of dough and roll with your hands into a ball.
  6. Using a fork, roll each ball in the white chocolate.  Place gently on a sheet pan covered with parchment paper.
  7. Sprinkle each ball with sprinkles while chocolate is still wet.
  8. Let truffles set in the fridge or at room temperature for a few hours to set.  Then, dig in!
