One of my main goals for this blog is to showcase affordable, healthy food that will free up your budget for other things. The amount you spend on food per week might shock you – but luckily, this is a more flexible category than monthly rent or student loan payments (ugh). For me, it helps me save money so that I can travel! My goal is to spend around $30 a week on groceries. This is pretty low, but doable – especially on a vegetarian diet. So I’m going to begin sharing what I bought each week and how much I spent.
This week I am planning on eating Roasted Vegetable Bowls, Green Avocado Smoothies, Chocolate Chia Seed Pudding, and Chickpea Salad Sandwiches. Luckily I already had a number of ingredients on hand and have leftover Banana Bread Oatmeal to eat for breakfast. Here’s my grocery list:
I ended up not getting coconut, and getting agave rather than honey or maple syrup because I had a coupon! All in all I went a little over-budget and spent $31.60.
